Nc’nean Quiet Rebels – Simon porta una collaborazione armoniosa tra Nc’nean e la rinomata birreria scozzese Innis & Gunn, mostrando un viaggio di maturazione unico. Questo single malt biologico è inizialmente invecchiato in botti di vino rosso STR prima di ricevere una ricca finitura in botti di stout d'avena, precedentemente utilizzate per invecchiare il whisky Nc’nean. Nc’nean Quiet Rebels – Simon is one of those whiskies that reminds you why the modern craft scene is pushing the boundaries of single malt. Bottled at 48.5% ABV, non-chill filtered and in natural colour, this limited edition is matured in red wine STR casks with a stout beer cask finish, and the influence is immediately clear. On the nose I find chocolate brioche, mocha coffee, candied cherries and baking spices, delivering a surprisingly deep and expressive profile. The palate is rich, rounded and well-structured, showing coffee fudge, black cherry jam, toasted malt and dark molasses, while the stout cask brings a refined, slightly bitter edge that keeps everything in balance. The finish is medium-long and persistent, leaving echoes of dark chocolate, coffee and gentle spice. It is a boldly gastronomic, character-driven whisky that feels adventurous yet beautifully controlled — ideal for drinkers looking for something genuinely different without sacrificing clarity or quality.
