Highlights include the return of Signatory’s Un-Chillfiltered Collection with several distinctive expressions, the complex Holyrood Noir Trilogy exploring French yeast and wine casks, Stauning’s new lightly peated double malt, and West Cork’s sweet Maritime Release finished in port casks. Signatory Un-Chillfiltered Collection Returns

After a break of over a year, Signatory Vintage brings back its Un-Chillfiltered Collection at an approachable 46% ABV (except for the cask-strength Clynelish) with no chill-filtering and no added color to retain authenticity. Notable releases include Highland single malt and Lowland single grain whiskies:

• Glen Garioch 13 Years Old 2012 The Un-Chillfiltered Collection Signatory Vintage is a 13-year-old Highland single malt matured in bourbon barrels with a first-fill Oloroso sherry finish. It balances malt and honey with bright fruits, vanilla, and dark dried fruit.

• Port Dundas 15 Years Old 2010 The Un-Chillfiltered Collection Signatory Vintage comes from the closed Lowland distillery Port Dundas. A 15-year-old single grain matured in first-fill sherry hogsheads and bourbon barrels, it is creamy and sweet, offering vanilla pudding, raisins, cherries, and syrup.

• North British 17 Years Old 2008 The Un-Chillfiltered Collection Signatory Vintage is a 17-year-old Lowland single grain aged in first-fill sherry hogsheads and refill bourbon barrels. It displays creamy vanilla, toffee, ripe pear, candied apples, raisins, and light chocolate.

• For cask strength enthusiasts, the Clynelish 10 Years Old 2016 100 Proof Edition #77 Signatory Vintage 10-year-old Highland single malt is matured in refill Oloroso sherry and new wood hogsheads. Bottled at 57.1% ABV, it marries Clynelish’s characteristic waxiness with spicy depth, orange zest, honey, dark berries, roasted nuts, and a hint of leather.

Holyrood Noir Trilogy: Yeast and Wine Barrel Complexity

Holyrood’s new Noir Trilogy explores the interplay between French wine yeasts and Scottish malt, matured in select w ine barrels for distinct profiles:

• Holyrood Premier Cru Yeast combines bourbon, Chardonnay, and white wine casks with Pinnacle-M and Maurivin yeast, delivering aromas of apple pie with caramel, buttercup, and pear.

• Holyrood Bordeaux Yeast uses bourbon and Bordeaux barrels with Pinnacle-M and BP725 yeast, offering dense aromas of cherries, strawberries, blackcurrants, and caramel fudge reminiscent of Scottish tablet.

• Holyrood Burgundy Yeast features bourbon casks and Burgundy barriques with Pinnacle-M and Maurivin B yeast, presenting sweet and savory notes of digestive biscuits with raspberry jam and pomegranate-filled pastries.

All three are bottled unchillfiltered and uncolored at around 47% ABV, maintaining their distinctive Lowland character.

Stauning RØG: Danish Lightly Peated Double Malt

Replacing the former Stauning Smoke, Stauning RØG offers a gentler smoke profile rooted in Denmark’s coastal terroir. Combining locally floor-malted rye and barley kilned over heather and peat, it matures in American oak and Madeira casks. Bottled uncolored and unchillfiltered at 43% ABV, it features:

• Nose: Gentle campfire smoke and roasted grains
• Palate: Smooth, with stone fruit, caramelized oak, and delicate spice
• Finish: Soft, lingering, and smoky

Stauning ROG enriches the brand’s core range with a complex but harmonious smoky element.

West Cork Maritime Release: Port Cask Finish

The West Cork Maritime Release pays homage to its founders' fishing heritage with uniquely shaped bottles. This single malt Irish whiskey is triple distilled and matured in first-fill bourbon casks before a finish in Quinta da Boeira port casks. Bottled uncolored and unchillfiltered at 46% ABV, it is the sweetest in the Maritime series, showing prominent dried fruit, nutmeg, black pepper, vanilla, and toffee notes.

West Cork Maritime Release highlights maritime tradition with a refined sweetness and spice.
