Ki One Distillery — formerly known as Three Societies — was founded in 2020 in Namyangju, South Korea, about 40 minutes from Seoul. It was established by Korean-American entrepreneur Bryan Do and Scottish master distiller Andrew Shand, who previously held distilling roles at Nikka in Japan and Glenlivet in Scotland. The name Three Societies represented the three cultures that shaped the distillery — Korean, American, and Scottish — symbolised by three national animals on the company crest: the Tiger, the Eagle, and the Unicorn.

Korea experiences dramatic seasonal temperature shifts — from below -10°C in winter to above 35°C in summer. This extreme variation causes the spirit in the barrel to expand and contract rapidly, accelerating the extraction of colour, flavour, and tannin from the oak. The result is that Korean whisky can develop remarkable complexity in just three to four years — far faster than traditional Scottish maturation. This natural climate advantage is similar to what has made Taiwanese whisky from Kavalan successful on the world stage.

Ki One deliberately seeks to create a whisky with a distinctly Korean character. Master distiller Andrew Shand has spoken about wanting to express the spicy, bold flavour profile that resonates with Korean cuisine and palates. The distillery uses new American oak to impart strong spice notes, and the extreme Korean seasons add their own distinctive influence. The Tiger Edition, for example, was developed with sherry and wine cask maturation to complement the Korean preference for fruit-forward sweetness, while the limited Red Pepper Cask edition explored the pairing of whisky with Korean chilli pepper.
