The Isle of Raasay Distillery introduces Isle of Raasay 2019 Rye Cask 3.4 X Distilled , a non-peated single malt matured in a former Woodford Reserve rye whiskey barrel (cask 2019/649). This release highlights the distillery’s innovative production methods and maturation philosophy, offering whisky enthusiasts a robust 59% ABV expression crafted from Concerto and Laureate malt. Distilled in 2019 and limited to 246 bottles, it stands as a distinctive chapter in Raasay’s evolving portfolio.

Maturation & Flavor Profile

The whisky was filled into the rye cask on June 25, 2019, starting at 63.5% ABV. Its maturation in this former rye barrel imparts unique character notes reflective of the Woodford Reserve history. Fermentation was carried out over three days before distillation. A standout feature of this whisky is the distillery’s proprietary pot still setup. Equipped with a spirit purifier that can be engaged or disengaged during distillation, it effectively serves as a "virtual third still," enhancing copper contact and elevating fruit character while softening the texture.

Master Blender's Statement

Alasdair Day, Co-Founder and Master Distiller of the Isle of Raasay Distillery, explains:
“When I designed our Isle of Raasay distillery, I wanted to create a system that allowed us to produce a range of different new make spirits.”
“This release is all about the additional copper contact gained through using the spirit purifier. Distilled with unpeated barley with the purifier system engaged, the process creates what we describe as a ‘virtual third still’, producing a lighter distillate with elevated fruit character and a softer texture.”
“It’s a new distillation technique for Raasay and one we’re incredibly excited to share.”
