Il Signor Camillo Antico Italiano 50 cl is the inaugural whisky from the Ligurian distillery operated by Diego Assandri in Sassello. Rooted in a family farming tradition dating back five generations, this release marks a milestone by highlighting locally grown unmalted spelt grain, a unique choice that reflects the distillery’s farm-to-glass philosophy. Il Signor Camillo honors Diego’s grandfather and earned a gold medal plus category winner status at the World Whiskies Awards 2026, underscoring its distinguished quality.

Maturation & Flavor Profile

The whisky is distilled in a traditional two-step process: first in a copper still heated by a water bath, then refined through a column still. It matures for three and a half years exclusively in new French oak barrels from the cooperage Botti Gamba. This short but purposeful aging period preserves the spirit’s fresh profile and the natural sweetness of the spelt grain. Diego Assandri explains the choice to use unmalted spelt as central to maintaining the grain’s character, accepting lower alcohol yield in favor of flavor integrity. The Ligurian hills, situated roughly 500 meters above sea level near the coast, provide the terroir with fresh spring water and the specific climate influencing the grain and fermentation.

Il Signor Camillo Antico Italiano 50 cl is bottled at 41.5% ABV, with a limited run of 628 bottles sized at 50 cl each. The suggested retail price is €179. This limited edition, launched on May 17, 2026, is available exclusively through Spiritory, offering collectors a rare glimpse into Italy’s evolving whisky landscape.
