The GlenAllachie Distillery enriches its Sherry Series with the introduction of GlenAllachie 11 Years Old Palo Cortado Sherry Cask Finish Limited Edition , an 11-year-old single malt matured in rare Palo Cortado sherry casks. Following three earlier 9-year-old expressions finished in Fino, Amontillado, and Oloroso sherry casks, this latest release offers whisky enthusiasts a unique perspective on secondary maturation with one of the most enigmatic sherry styles.

Maturation & Flavor Profile

This single malt is initially matured in American oak ex-bourbon barrels before undergoing an extended secondary maturation exclusively in Palo Cortado sherry casks. Palo Cortado, distinguished by its hybrid oxidative aging process that bridges the aromatic finesse of Amontillado and the richness of Oloroso, imparts a complex profile of ripe plums, dark mocha, and warming cinnamon spice balanced by refined dryness and depth. Bottled at 48% ABV, natural colour, and without chill filtration, it preserves the full expression of the cask influence.
