Eden Mill Launches Rare Single Cask Series with Distiller’s Cask Release #1

The re-established Eden Mill Distillery in St. Andrews introduces a new chapter with its Distiller’s Cask Release series, hand-selected by Head Distiller Scott Ferguson. The debut expression, Eden Mill 8 Years Old Distiller'S Cask Release #1 , is a lightly peated single malt matured for eight years in an ex-Amarone red wine cask—a rare vessel for this style, with only two such casks ever filled at the distillery. This release stands out for its unique maturation and careful craftsmanship, delivering a distinctive whisky experience.

Maturation & Flavor Profile

This lightly peated whisky, made from 100% peated malted barley with peat sourced from St Fergus, Aberdeenshire (20 to 30 PPM phenol level), spent eight years maturing in a Northern Italian Amarone wine cask. The influence of the cask imparts dark fruit richness layered with floral peat. Bottled at a batch strength of 53.2% ABV, the whisky is full-bodied and complex, featuring a long, lingering finish that reveals evolving flavors.

Master Blender's Statement

Scott Ferguson shares:
“Peated whisky is a style close to my heart and was probably my first love when it comes to whisky. I understand it is not for everyone, which is why I have aimed to create a spirit that feels more accessible, balanced by a cask type that complements the whisky beautifully. The light smoke is reminiscent of summer evening beach bonfires in St Andrews.”
