Kilchoman Genesis Fermenting Stage 5 is the fifth chapter of Kilchoman's Genesis series, which follows the 1,130 day journey from barley to bottle, and it is devoted to days 29 to 33: fermentation. It pairs 60% ex bourbon casks from a dried yeast fermentation, rare for Kilchoman, with 40% tawny port casks from a pressed yeast batch, and the result is an elegant, fruity single malt with an intense fruit sweetness over the distillery's smoky character. Made from 20 ppm Rockside barley grown at Kilchoman and 50 ppm barley peated by Port Ellen Maltings, it is non chill filtered, has no added colour, is bottled at natural cask strength of 49.8% ABV and is limited to 2,200 bottles for the German market.
