Working with whisky every day has shaped my palate more than any single bottle. Today I am drawn to the rich, sherried style of Dalmore and to the balance and precision of Japanese whisky, with Yamazaki as a firm favourite.

I see myself as both drinker and collector. I buy with intention and prefer fewer bottles with more meaning. Some are opened slowly, others are kept for the right moment. For me, whisky is as much about the story behind a bottle as it is about what is in the glass.

A Night On Earth The Finale is the last of the five Macallan A Night On Earth editions, with paintings by Hill Spriggins of New Year's Eve in New Orleans. The Carta Nautica 20 Years Old is a Travel Exclusive that Macallan sells at airports only. The 12 Years Old 110 Proof is the same 12 years as the Sherry Oak, but at 55% instead of 40%. Only a limited number of bottles. One is the last of its series, one you normally have to fly for.
