The Nc’nean Distillery, situated in the remote Scottish Highlands, continues to innovate with its environmentally conscious whisky production under Annabel Thomas. The latest additions to their acclaimed Quiet Rebels series spotlight team members Simon and Sarah Hewitt. This year marks the series’ expansion beyond traditional whisky with two distinct releases now available in Germany: the Nc’nean Quiet Rebels – Simon Organic Single Malt and the Nc’nean Quiet Rebels – Sarah Whisky Liqueur Organic Whisky Liqueur. Simon’s expression is a collaboration with Innis & Gunn brewery, while Sarah’s liqueur introduces organic oats for a vegan, lactose-free alternative.

The Nc’nean Quiet Rebels – Simon Single Malt is non-chill filtered with natural color, preserving authenticity. Sarah’s liqueur embraces a creamy, full-bodied character achieved without dairy, emphasizing innovation in materials and inclusivity for diverse consumers.

Maturation & Flavor Profile

The Nc’nean Quiet Rebels – Simon Single Malt matures initially in STR red wine casks—wood shaved, toasted, re-charred for complexity—and finishes in oatmeal stout casks formerly used for Nc’nean whisky. This process yields rich, buttery notes highlighted by chocolate brioche, coffee fudge cake, and cherry jam aromas. The Nc’nean Quiet Rebels – Sarah Whisky Liqueur combines Nc’nean’s Organic Single Malt with organically certified oats and Demerara sugar, offering a creamy texture and flavors of crème brûlée, honeycomb caramel, spices, and chocolate mousse.

The Nc’nean Quiet Rebels – Simon is priced at €84.90, while the Nc’nean Quiet Rebels – Sarah Whisky Liqueur retails at €27.90. Both are now distributed by Kirsch Import in Germany and have already garnered strong interest, especially Sarah’s liqueur which sold out rapidly in the UK.
