Lark Distilling Co. Ltd. Launches New Luxury Single Malt Series
Lark Distilling Co. Ltd., a pioneer of Tasmanian whisky, has introduced an elegant new portfolio of single malts presented in redesigned bottles. The collection comprises four distinct expressions: Lark No. 151 Fire Trail , Lark No. 183 Devil’s Storm , Lark No. 285 Ruby’s Abyss , and Lark No. 168 Cinder Forest . This release marks a significant step in the distillery’s commitment to luxury whisky craftsmanship.
Maturation & Flavor Profile
Each bottling in the series showcases a complex maturation strategy featuring Australian Pedro Ximénez (PX), Apera (Sherry), and Muscadelle casks. Both Lark No. 151 Fire Trail and Lark No. 183 Devil’s Storm receive additional finishing in ex-Bourbon and American Oak wine casks, setting a rich foundation of flavors. The Lark No. 183 Devil’s Storm distinguishes itself with Tasmanian peat smoke and maturation in century-old Seppeltsfield Tawny Port casks. Meanwhile, Lark No. 285 Ruby’s Abyss , the inaugural release of Lark’s Super Luxury line, is matured exclusively in Seppeltsfield Tawny Port casks, some aged over 100 years, alongside the other Australian casks. The travel retail exclusive Lark No. 168 Cinder Forest also features first-fill Tawny Port casks, complemented by the signature maturation profile.
Tasting Notes
Lark No. 151 Fire Trail
• Nose: Baked pears infused with caramel, vibrant citrus, and a delicate wisp of cedarwood.
• Palate: Chocolate ganache over stewed mulberries, layered with vanilla custard and apricot compote.
• Finish: Dark cocoa-kissed hazelnuts meet velvety coconut cream, while sultanas mingle with bush honey.
Lark No. 183 Devil’s Storm
• Nose: Stewed plums steeped in wildflower honey, scorched orange, and roasted pecans dusted with cacao.
• Palate: Dark chocolate over blackberries, balanced by caramel fondant and charred peaches touched with peat smoke.
• Finish: Old oak deepens into burnt maple syrup, with sticky toffee pudding and toasted sesame brittle leaving a lasting warmth.
Lark No. 285 Ruby’s Abyss
• Nose: Steeped pears in aged dessert wine, amber raisins, caramelised Demerara sugar, and a whisper of salted macadamia.
• Palate: Lush plum preserve folded through chocolate sauce, with buttery croissant layers and a drift of earthy peat.
• Finish: Deep fortified oak warmth lingers through spiced golden treacle, as candied quince and umami leave a velvety depth.
Lark No. 168 Cinder Forest
• Nose: Poached nectarines glazed in acacia honey, toasted almonds, and a hint of sugared lemon crepes.
• Palate: Berry reduction swirled into chocolate, with brûléed vanilla custard and butter-soaked shortbread.
• Finish: Espresso-laced nougat in clotted cream, along with lingering spiced date jam.
Release & Availability
The first three expressions — Lark No. 151 Fire Trail , Lark No. 183 Devil’s Storm , and Lark No. 285 Ruby’s Abyss — serve as the global launch for the new series. Lark No. 168 Cinder Forest , however, is designated as a travel retail exclusive, available only at select international airport locations. Each release is presented in a 700ml format, with ABVs ranging from 41.5% to 43.8%, except for Lark No. 168 Cinder Forest which is bottled at 55.5% ABV.
