Fresh-pressed cane juice from San Pedro de Macorís underpins this crystal-clear rum. Wild yeast slowly turns sweetness into alcohol. Column stills preserve pure cane aromas. The new-make rests three years in charred bourbon barrels. Activated charcoal strips colour, never flavour. The nose offers coconut flakes, caramelised banana and a splash of lime zest. Raw cane sugar hides beneath, flanked by white pepper. The palate opens creamy. Ripe mango, toffee and clove follow fast. Elegant oak vanilla meets a hint of spumoni ice cream. The finish stays medium. Candied lime, gentle oak and dry cocoa linger. Forty-three percent ABV gives structure without burn. Neat at sixteen degrees it unfolds. In a Daiquiri it brings freshness and body.
