Working with whisky every day has shaped my palate more than any single bottle. Today I am drawn to the rich, sherried style of Dalmore and to the balance and precision of Japanese whisky, with Yamazaki as a firm favourite.
I see myself as both drinker and collector. I buy with intention and prefer fewer bottles with more meaning. Some are opened slowly, others are kept for the right moment. For me, whisky is as much about the story behind a bottle as it is about what is in the glass.
