Immediately after harvest, the grape pomace is processed fresh – no delay, no loss of aroma. In the still, the soul of Provence comes alive: Saint Martin, an Eau de Vie de Marc from Château de Saint-Martin in Taradeau. Distilled from the pressed remains of noble grapes, the spirit rests first in new oak, then in seasoned casks. Fresh wood lends golden colour and delicate toast. Mature barrels refine the structure over three years. The alcohol softens, the character deepens. The nose reveals warmth: roasted almonds, gingerbread, candied orange peel. Dried apricot and a hint of pepper follow. The palate is silky. Honey, fine tannins and gentle herbal spice guide the mid-palate. The finish lingers – dry, long, with notes of fig, cinnamon and noble wood. Saint Martin is bottled at 40% ABV. The wax-sealed cap speaks of craft and tradition. In French cuisine, Marc serves as a digestif or Trou Provençal: a ritual sip between courses to refresh the senses. Or simply to prolong pleasure.
