Eleven years of tropical rest give Bacoo Rum 11 Years a natural bronze gleam and silky viscosity. Fresh-cut cane is pressed immediately, the juice ferments with wild yeasts and distills gently in column stills. Resting undisturbed in first-fill bourbon barrels, the Dominican rum needs no colouring to show its clarity. Legend says the bottle spirit Bacoo drifts in empty rum flasks, grants wishes and feeds on banana and milk. The bouquet seduces: warm caramel crust, ripe banana, dark chocolate, then coconut and candied orange peel. Toffee glides in silky, followed by toasted nut, grilled pineapple and deep oak-vanilla. A hint of liquorice adds tension. Finish medium-long, honey-soaked, with cocoa, pepper and a subtle tobacco spice.
